[Culinary Tourism] – Seruit Paste; The Most Iconic Dish of Lampung

For those of you who ever visited Lampung or still in Lampung, it is incomplete for you if you do not taste Seruit paste. Yups, Seruit paste has been the most iconic culinary in Lampung. If you ask everyone in Lampung about whether or not they know Seruit paste, they will almost reply “yes, I know” for that question. In Bahasa, Seruit paste is translated as “Sambal Seruit”. It is a paste that consists of tomato, chili, salt, shrimp paste, mango (sometimes they also use “Tempoyak” as the alternative of mango) and all of those stuffs are baked with fish. If you ask me about the taste, I will answer “Wooooow, it’s super delicious!!!”, although it is so spicy and hot, you can’t deny that you will be falling in love for the first taste!

Seruit is commonly served in daily Lampungnese dishes. It is a “compulsory” dish that should be served in every mealtime. There is an assumption among Lampungnese that if you do not like Seruit, it means you are not a Lampungnese. That assumption shows how love Lampungnese toward Seruit paste. In conclusion, because this paste is so iconic, Seruit paste is not merely served during a special event only, it’s a daily dish already. Even today, some hotels in Lampung (especially hotels in Bandar Lampung) serves Seruit paste as one of their menus. The first hotel in Lampung that serves Seruit paste as one of their menus is The 7th Hotel Bandar Lampung.

There are several steps that should be done to make Seruit paste. The process is, fish that have been cleaned beforehand is flavored with the spicy paste. The spices are garlic, salt, turmeric, and ginger. After that, the fish is baked for about 12 minutes. When it half-baked, the fish is smeared with sweet soy sauce and is seasoned with the mix of garlic, salt, and coriander. Meanwhile, for the Seruit mixture, it consists of red chili, small chili, salt, vetsin, potpourri, and paste baker. These sauce ingredients then pounded until smooth. Seruit is usually served with raw vegetables which Indonesian call it as “Lalapan”.
So, are you ready to taste this spicy dish? I am sure almost of you have tasted Sambal Balado or Balado paste, but I am sure too that Seruit won’t be disappointing, or even I can say, you will be addicted!
